Dark green pumpkin, golden flesh. Ambar is an unconventional pumpkin - dark green on the outside and intensely golden-orange inside. Its semi-bush habit means it does not spread as widely as typical pumpkins, and the 2–4 kg fruits are easier to process at home than 8-kilogram giants.
Ambar stands out for two features: its unusual dark green skin colour for a pumpkin (it surprises guests) and its semi-bush habit - it takes up less space in the vegetable garden than classic trailing pumpkins. The flesh is firmer than that of other pumpkins, contains 15–18% dry matter and has an exceptionally high beta-carotene content. This makes it ideal for preserves - it retains its structure after heat treatment.
Sowing (May, direct in the ground): sow the seeds directly into the ground at a spacing of 1 × 1 m, placing 2–3 seeds in each spot, at a depth of 2–3 cm.
Selecting the strongest plant: after emergence, leave one, strongest seedling in each spot. Remove or transplant the others.
Care: water regularly at the base, and provide fertile soil, preferably after manure was applied the previous year. Mulching helps retain moisture and suppress weeds.
Harvest (September – October): harvest the fruits before the first frosts. The skin should be firm and the stem dried. After harvesting, leave them in the sun for 1–2 weeks, then store them in a dry, cool place - they will keep until spring.
Ideal for preserves - the firm flesh holds its shape after processing and is excellent for pumpkin jams, pickles and compotes. A classic choice for cream soups and roasting in slices. It is also used in the confectionery and distilling industries. Its high beta-carotene content makes it a valuable vegetable for a healthy diet.
The beta-carotene in pumpkin is fat-soluble - to ensure your body actually absorbs it, cook pumpkin with olive oil, butter or cream. Pumpkin cream soup with added fat has significantly better vitamin A bioavailability than pumpkin cooked without fat. A classic combination: pumpkin + butter + ginger + a pinch of nutmeg.
