The heart of Mexican cuisine. Serrano is a pepper that is indispensable in authentic salsa verde or pico de gallo. The elongated, small, glossy red fruits have a distinct heat (10,000 SHU – approximately 5× hotter than jalapeño), but above all, a characteristic, fresh, slightly fruity note.
Serrano is a mid-early variety known for its exceptional productivity – one plant produces 30–50 fruits and is so abundantly covered with red pods that it looks like an ornamental plant. It grows very well in pots on balconies and terraces, making it an ideal choice for people without a garden but with a love of Mexican cuisine.
Sowing (March, under cover): sow the seeds in trays or plug trays at a temperature of 22–25°C. When working with hot peppers, it is worth wearing gloves – the juice from the seeds can irritate the skin.
Pricking out: transplant the seedlings into 7–8 cm pots when they have their first pair of true leaves.
Planting out (second half of May): after the risk of frost has passed, plant in the ground or in pots of at least 5 l, with 40 × 40 cm spacing. Choose a sunny, sheltered position and fertile, humus-rich soil.
Care: water moderately and fertilize every 2 weeks. The more sun, the hotter the fruits.
A staple of Mexican cuisine: salsa verde, pico de gallo, guacamole and marinades for meat. In Poland, it is also excellent as an addition to pizza, sandwiches and pasta sauces. It can be dried, pickled in vinegar or frozen without losing its aroma.
Hot peppers love warmth – the seeds germinate best at 22–25°C. If germination is uneven, the growing medium is often too cold. Place the seed tray over a radiator (with insulation) or use a heating mat for sowing – the difference between 18°C and 24°C can often mean the difference between 5% and 95% germination.
