What makes this variety special

Cayenne is a historic variety that has been used for centuries as the basis of the world’s most popular hot spice. The plant is medium-tall and well branched, with fruits hanging in dense clusters. The fruits remain firm on the plant for a long time, so they can be harvested in batches as they ripen.

Growing step by step

Sowing (March, under cover): sow the seeds in trays or plug trays at a temperature of 22–25°C. Germination occurs after 10–14 days.

Pricking out: transplant the seedlings into 7–8 cm pots once the first pair of true leaves has appeared.

Planting out (second half of May): after the risk of frost has passed, plant in the ground or in pots of at least 5 l, spacing plants 40 × 40 cm apart. Choose a sunny, sheltered position.

Care: water regularly at the base and fertilize every 2 weeks. To obtain fully ripe red Cayenne peppers, allow the fruits to ripen for at least 80–90 days from flowering.

Uses

Ideal for drying and grinding – homemade Cayenne powder is probably the simplest and most satisfying chili preserve to make at home. Simply harvest the ripe fruits, dry them in a warm, dry place (or in an oven at 60°C), and grind them in a coffee grinder. A classic for soups, meats, sauces and stews.

Gardener’s tip

The best Cayenne is harvested when fully ripe – when the fruit is softly flexible rather than stiff. Firm fruits still have some heat, but lack depth of flavor. Be patient and harvest in batches: the first fruits in August, and the last just before the first frosts.
