That is quite intense for such small fruits: a single berry can noticeably season an entire dish. Thanks to their small size and thin walls, the fruits dry and grind very well, producing an intense powder.

Fruit and plant appearance

The fruits of var. baccatum are small, round or slightly elongated berries measuring 1–2.5 cm in diameter, often with a flattened tip. They ripen from green to red. The leaves are small and smooth, noticeably smaller than those of cultivated varieties. The shrub grows to 90–150 cm, while in a pot it can be kept at around 60 cm tall after pruning.

Origin and history

Capsicum baccatum var. baccatum is the wild form of the species from which cultivated ají peppers arose – botanically, var. pendulum. It grows naturally in Bolivia, Brazil and Paraguay. Gene banks preserve seed material of this form (PI 260567 in the USA, CGN 23260 in the Netherlands), making it available to breeders and collectors. This is a plant grown more for study and collection than for yield.

Growing requirements in temperate climates

Despite its tropical origins, wild baccatum performs surprisingly well in cooler, northern climates – the species Capsicum baccatum is known for its tolerance of cooler nights. From transplanting to the first ripe fruits takes 63–120 days or more, depending on warmth and light. It is a perennial plant: after the season, it is worth pruning it and moving it to a bright room, as temperatures below 5 °C damage it. The yield may be lower than that of cultivated varieties – this is the price of its wild character.

Culinary uses

The small, hot berries are best suited for drying and chili powders – once ground, they produce an intense red seasoning. They can also be added whole to oils, marinades and stocks. For many people, however, the main reason to grow it is its botanical value: it is a living specimen of an ají ancestor, ideal for pepper collections and educational gardens.
