The purple skin is only the outer layer; inside, the flesh is creamy white, crisp and slightly sweet, with a flavour similar to a young broccoli stem. Purple varieties are also noticeably more resistant to cold and overgrowth than white ones, which is why they perform best in autumn cultivation.\u003c\/p\u003e\u003cp\u003eIts main advantage is its shelf life: swollen stems harvested in October or November, with the leaves trimmed, can be stored in a cool cellar or in sand until February without losing their firmness.
